A healthy, tasty lunch sandwich that is filling and full of protein. This Turkey Recipe is a favourite of Jack’s, especially when he’s in training with Connacht Rugby.

MethodPlace the turkey medallions on a tray and grill until golden brown.
Toast the bread, spread it with mayonnaise and put 3 turkey medallions on one out of two slices of bread.
Top with cranberry relish and baby leaves. Cut it in half and serve.
