A healthy, tasty lunch sandwich with quick to cook turkey medallions! Filling and full of protein. A favourite of Jack when he’s in training with Connacht Rugby.

Place the turkey medallions on a tray and grill until golden brown.
Toast the bread, spread it with mayonnaise and put 3 turkey medallions on one out of two slices of bread.
Top with cranberry relish and baby leaves. Cut it in half and serve.
